A "Souper" Season for Veggies

If you're like me, vegetable consumption doesn't come effortlessly. Luckily, I have some tricks up my sleeve to eat a variety of plants without even realizing it! One advantage of the colder weather is the fact we want to warm up with food.

What better food to heat us up and delivery a high dose of nutrients than a steaming bowl of soup? You can use practically any vegetables you have on hand, with just a few spices & sometimes the help of an immersion blender, you have a great meal on hand for a few days. I love to eat certain soups over a bed of rice, or enjoy with a crusty & soft piece of sourdough bread. Here are some of my favorite recipes:

  1. Vegan Leek & Potato Soup This is probably one of my all time favorite soups *heart eye emoji* The creamy yellow potatoes, savoury leek, and silky coconut milk make it a very comforting meal. Leeks are high in vitamins A, C, K, and contain a notable amount of magnesium. This soup is full of fibre, and healthy fats, making it a great choice for part of your last meal of the day.

  2. Sweet Potato & Carrot Soup These are a powerhouse of nutrients and flavour. An amazing source of fibre, vitamin A, Vitamin C, and beta carotene from both orange veggies your body will love! The addition of cinnamon also makes this ideal for supporting healthy blood sugar levels.

  3. Soul Soothing Peanut Stew Chickpeas, spinach, peanut butter; it sounds like an odd combination but don't be fooled, it's delicious! The chickpeas are slow to digest, fibre rich, full of b-vitamins and potassium. Iron is present in both chickpeas and spinach, which makes it a good thing to consume during the week of menstruation. The healthy fats from the peanut butter gives this soup a well rounded nutritional profile.
